I'm so pleased you like the filo approach - let me know how it goes. Also let me know how filo in a waffle maker goes! I've never tried it. I've seen puff pastry used like bread in a sandwich maker with a fun filling and that works beautifully. (actually, maybe mincemeat would work as the fun filling?)
Well, if this isn't an illustration of the old saying that you can't choose your family, then I don't know what is! I can see that making them just for yourself would be troublesome, not least the temptation of a dozen warm pies just sitting there looking at you!

I don't think you can ever have enough mince pie variations - from the fillings to the casing. I'm happy to try them all!
I quite agree! And I didn’t even get into lids. Full, star, crumble, flaked almonds, marzipan....
And the best thing is that we only eat them at Christmas so they never get boring or ho-hum. A mince pie is always a delight.

Yes...maybe... the woman chef last night chopped cooked duck leg through waffle mix and well...it looked incredible!
