FREE TO READ: a simple salad of asparagus, peas, broad beans, croutons and the jungle of green that makes up my spring herb bed. Plus, more ways to cook with it.
Nothing quite says spring like asparagus, and while we’re all about pumpkins here in the southern hemisphere, I've saved you recipes for when we come out on the other side!
Pumpkins go in the ground in late spring, early summer, hopefully when the frosts have gone. Smaller pumpkins grow well, the larger ones depend on having enough warm weather. I've just picked the last of mine and they're currently curing. They're looking very orange and autumnal!
Sounds like you have exactly the same situation as we do in the UK - they need such a long summer don't they? Hope you've had a good harvest this year.
This looks fantastic and thanks for sharing! This makes me think of Julius Roberts asparagus and wild garlic carbonara I made from his book with one of the first bunches this year: such a brilliant early spring pairing.
Oooo I haven’t seen that recipe - will look it up. You’re right, it’s such a satisfying pairing isn’t it? I feel a wild garlic mayo coming on to go with asparagus too…
pg 123 if you have The Farm Table! And you now have me thinking of a wild garlic as well as tarragon bernaise, because steak last weekend was not the best thing on the plate to pair with the sauce, the bernaise was!
I thought all of mine had been killed off by the hosepipe ban but two have revived - they all need their tops pinching out so I have my eye on Richard Goodwin's tarragon gimlet!
wow so green! I love this spring panzanella idea - I am always on a one track mind for tomato-based panzanella.
Well I was all about tomatoes like you too, but then I realised the joy of soggy stale bread in virtually any salad!
Exactly the sort of thing i want to eat when the sun comes out at this time of year, thank you!
My pleasure! I was in the garden this morning with frozen fingers but I'm determined to call it Spring now

And how are the pumpkins coming along? When do you sow them down there?

Oooo tarragon. My tarragon plant is already going wild...

never a chore...
I'm going to be making this Spring Panzanella - it looks delicious!
