As you can see, I’m a bit giddy. It’s publication day for my latest book, Rough Patch, and I’ve got lots to show you.
But mainly, as I say in the video, THANK YOU for being here with me.

Mushroom, chestnut and leek pastilla
When leeks do finally arrive, this is what I cook first. It’s a vegetarian version of the traditional North African dish made with shredded meat, usually pigeon, eggs, spices, icing sugar and flaked almonds. Yes, an unfamiliar combination to some, but it really is the business, and the flavours work beautifully with the sweetness of the leeks and chestnuts against the deep savoury umami of mushrooms to make a dish that is both comforting and novel.
This is a variation on a recipe I wrote for Borough Market many moons ago and which they have kindly allowed me to use in the book.
Serves 4-6
50g butter, plus extra, melted, for brushing the filo
300g mushrooms, roughly chopped
5 large or 6 regular leeks, finely sliced
3 eggs, beaten
