Just had this tonight. It was lovely and flavourful and more filling than it looked! I thought the squash skin would be tough (turban) but it wasn’t at all and it wasn’t too sweet like squash can be sometimes because of the crispy parmesan. Lovely!

Made this excellent dish tonight to give myself a treat at the end of a stressful week. Just what I needed! Excellent flavours and textures, easy to prepare. A real winner for me. Thanks Kathy. Book is excellent too by the way, started it today.
